peach pancakes for breakfast

It’s only 24 degrees out. (Minus 2 C…!) That means two things: 1. I don’t want to go out for any reason if I can avoid it, and 2. today is a good day for pancakes for breakfast!

Here’s the plan. I opened a can of sliced peaches last night for a light dessert to top off some leftover spaghetti I had for supper. I’ll chop the peaches, combine these and the remaining juice with applesauce and egg for liquid, toss in some sliced crystallized ginger and cardamom (or nutmeg, or both), chopped walnuts, maybe some brown sugar, and blend in the dry ingredients for my pancake batter. I’ll brew coffee while the griddle heats up. I’ll pour my cranberry juice and coffee, then start the peach pancakes.

In short order, the peach pancakes will be ready, I’ll plop myself down to enjoy a yummy breakfast, and the UPS delivery person will knock on the door to make a delivery foretold in an e-mail this morning!

Of course, while I’m receiving the box – ironically with a cat food order in it -, the cat boys Andy and Dougy will check out my peach pancakes. Sniff! Sniff! Sniff! Shed hair in the food! Shed! Shed! Shed! Maybe sneeze in the coffee, which does not appeal to the boys. And finish the table intrusion by knocking over the cranberry juice when “the human” starts back to the table!

I can’t wait! I love a mess of pancakes on a cold day! Of course, the cat brothers will be excited by the box, which I will have to open if I want to eat while the pancakes are hot.

  1. Those boys keep you busy. It is 55 here and I have the fans on as any time the sun comes out this little apt heats up. It has double thermapane windows.
    Hope you enjoyed those pan cakes and I have gotten out my crock pot for winter cooking as canned soups and stuff have way to much salt in them for mine and hubbys blood pressure.

    • Mmm! Now you got my attention! I make pretty good crockpot soup myself (and stove top, too), and I like to make it from scratch for the cleaner taste as much as the lower sodium compared with canned soup. A nice veggie soup sounds like the ticket for later this week after I get to the store. Anyway, hope your soup turns out really yummy, which, of course, it will!

      As for the peach pancakes, they were very tasty. The only problem was I ate too manner of them. I should have saved some for the next day!

    • They are tasty, for sure! There are many ways you can make them fancier or less, but I personally don’t like plain pancakes that much when there are so many things you can do with the basic idea to make them more interesting and flavorful.

      Andy and Dougy don’t get human food, though they always want me to let them smell whatever I’m eating. Tedious sometimes, but it satisfies them: “Amazing! I didn’t like the smell of coffee yesterday or any of the hundreds of times I made the human let me smell the fresh ground beans, and I STILL don’t! Amazing!” It’s a little ritual we go through, it’s harmless, and it seems to reduce the begging during the meal. When I don’t let them smell what I’m fixing, I have to deal with cats climbing on the table and really being a nuisance! (Needless to say, I don’t leave my meals unattended.)

  2. Peach? I never heard of peach pancakes. I can sort of imagine it, but not really. Ummm, now you make me want to try it!
    It’s cold here too! It’s a day that I intend to write! Have a nice warm one, Dou!! =^.^=

    • I recommend mashing the peaches or slicing then very thin or they are pretty lumpy! I used a Greek yogurt cup (which I had) instead of applesauce cup (which I thought I had!), and (since I’ve used it before) it was pretty tasty! The applesauce I use has cinnamon in it, but that’s not important: add the spice or spices you like!

      I occurred to me that making a peach sauce to put over the pancakes might be simpler. Oh well! They were tasty!
