It’s asparagus on toast with chopped boiled egg in a cheese sauce season again! It’s my favorite springtime meal!
Andy prefers to stick with ‘nip, all year ’round, but you knew that.

Interesting dish, Doug. Andy’s is much simplier.
And Andy eats it right up!
Good for him!
That looks good. We grow asparagus, but it won’t be up until May sometime.
Same here.
It looks so good. I love asparagus.
I’ve decided one of these days I’ll try making soup with it.
Fresh asparagus is a wonderful thing! We have a small patch of it here and look forward to the first shoots.
We had a clear night and 28 degrees this morning, but it will get up into the 50s today.
I miss having a garden where I can grow it!
You might be able to grow some in pot outside the back door? All it needs is a deep pot to send its roots down.
I have a couple of large planters I’ve considered growing tomatoes in but haven’t yet….
Hopefully deer do not wander through you back yard. They love to eat tomato plants.
They usually don’t come into town here.
I’ve never heard of this toast!
It’s commonly made, but it may be someone in your family didn’t care for asparagus. My mother used to make it every asparagus season, and I carry on the preparation of this meal.
I have never likes asparagus, it tastes odd! Sorry… 😂
It does have a taste I can imagine is off-putting to some people.
Some hot sauce may help! 😂
Actually, that is a good variation I have sometimes. The first time of the year, though, it has to be the traditional recipe.
It looks good.
If you like asparagus, this is one simple way to use it steamed.
I’ll have to remember that when my wife is home. She is away in a business trip and she says I can use the stove because I have ADD and I’m likely to set the house on fire. Probably not but I have been known to forget I have food cooking.
It’s easy to do… (Leave the stove on, I mean.)
It’s easy for me. 🙂
I love asparagus too.
It is a seasonal treat! The white asparagus you get in Europe is yummy, too.
That must be beautifully tangy
The sauce does have a bit of Coleman’s dry mustard in it. I used other prepared mustard if the Coleman’s is used up, a good Dijon mustard works nicely.
OMG, that dish sounds mouthwatering! I want some!
It is a simple dish that requires messing up three pots and a bit of timing to have everything done at just the right time.
asparagus is the nip for people… we are happy that it will be available here soon….
Yes, it is! I planted some several years ago. The year before I moved from that place, it finally started to send tiny spears up. I never got the best of it. Rats!
There are places in my state where asparagus planted years ago by early settlers (I guess) has gone wild. People who know where this wild asparagus guard the sites more tightly than the Lost Dutchman mine location secret and enjoy copious amounts of it in season. I am not one of those fortunate people. LOL!
