10Feb26: exhausted #2…

It must be the cancer. I don’t recall sleeping this much, yet being exhausted.
Andy still has his needs, and I try to keep up with them.

=(^+^)=

I’ve looked at that butternut squash hundreds of times, thinking I should do something with it before it goes bad.

Monday it happened! I peeled and cubed the squash. Topping the pot with chicken broth, I boiled the squash cubes till they were soft, then I used my immersion blender to make a fine soup!.

Oh, I also took the tender immature stalks of celery and chopped them to add to this soup. I added dill, onion and garlic powders, lime-lemon salt, regular salt and pepper, cinnamon, nutmeg, and, at the end, ginger, a nice dollop of butter and some milk.

(“How dare you talk about food when you still haven’t fed me, Doug?” Oops! I stopped to feed my kitty!)

I don’t usually do recipes when I make soup. I belong to the “dump and taste” school of soup makers. How much of each of these did I add? Some here, some there, taste, then figure out what would make it to my taste!

Yeah, I forgot I even had to add a small amount of plain sugar when the soup  headed to the “too savory” direction, though I was careful not to turn the other direction, just to the “squashy” zone where butternut soup is my favorite!

Was the soup good? Oh yeah!

(Andy’s time to nap.)

Since my diagnosis with breast cancer, I’ve lost 15.5 pounds, a bit more than seven kilograms. It’s a heck of a way to take off weight, but an ironic “benefit” for someone who has tried to take weight off for years.

  1. The soup sounds good. I don’t cut up butternut anymore- I bake it and then scrape it out of the skin. Much easier on the hands.

  2. Many things can contribute to weight loss, including general daily stress. I am glad you were able to make some nourishing soup! We use our own hot peppers (dried) in our soups and various dishes here. They are quite warming in this weather.

  3. Is this fatigue and weight lose ok with your doctor? I had breast cancer and I didn’t lose weight. Anxiety would make me tired but my appetite carried me on. Your soup sounds wonderful! I love butternut squash soup! All soups should be a dab of this and a dab of that! Makes it interesting!

  4. Doug, your soup sounds like a gourmet dish… so yummy to read all of your ingredients. I don’t have the fresh squash, but i do have butternut squash raviolis in the freezer… you’ve prompted me to make those for dinner… and add in the frozen butternut squash in a homemade sauce akin to your soup… thank you for that!! Doug, it’s not easy going thru what you are dealing with; you are a strong man and thankfully you have seen and unseen help… and our wonderful Andy by your side. Your friends here keep you in loving prayer. Lots of hugs to Andy too…

    • And the soup turned out to be very tasty, regardless of the curious combinations of herbs and spices O used. Butterball squash seems to take on everything and come out creamy and delicious!

  5. I knew you might have cancer but missed the diagnosis part. I have a very different type and have responded very well to meds. But I can relate to the exhaustion, for sure. I’m still not over that part after 2.5 years. I’ve lost weight, too but am gaining some back. Hoping treatment is otherwise going well. Andy is smart and is probably aware. The soup sounds good.

    • The soup was very tasty! Yes, the weight loss andfatigue are already old “friends” from earlier illnesses especially, but I am barely into this new one.

    • I never make soup the same way
It’s mostly what’s on hand that I should use before it goes bad. The. butterball squash sat on the counter for weeks before it hit a moment where it just needed to be used before it became a rot. Good decision, too! Though it was firm and still good, it had a small spot on the end what looked like it would go shortly. I got it peeled and made into yummy soup just in time!

      Doug
