I have two chicken breasts in the crockpot. They are huge, which makes me think I’ll half them instead of trying to eat either whole. It would be helpful if you could buy single breasts or half portions of meat. Ground beef, at least at my grocery store, can be purchased in roughly pound/ .45kg or roughly two-pound/ .91kg portions in any of three levels of lean – 80%, 85%, or 90% – depending on how you plan to use it.
I had some deli-sliced Black Forest ham I needed to use as soon as possible, too, so I split the breasts and stuffed some ham in both of them. Not any recipe in particular, just a thought on how to use the ham in something other than another sandwich! It should season the chicken or ruin the ham. I’ll find out later today.

I use a things needing using up in soups and stews. I am sure the chicken will come out just fine the way you are using it with the ham.

I’m making chicken salad with part of it and doing just that! I’m always hesitant to freeze things because that lots of times becomes something ai end up scrapping out several months later when I don’t feel comfortable eating it..
Chicken salad would have been my hext suggestion, , but I didn’t know how you felt about mayo. Many people try to avoid it.
I have no problem with mayonnaise, though I don’t make it from scratch. I have made it from scratch in past since it is darn good made fresh, eh?! Maybe I’ll do it again. I haven’t thought about homemade mayonnaise in years.
I’ll be freezing part of it and making chicken salad out of the rest. I like the salad in sandwiches.

Your chicken reminded me: I used to pound chicken flat, top it with ham and swiss cheese. Then fold the chicken breast back over itself and secure it with a skewer. Put some bread crumbs on top and bake. Now my son and daughter do all of the cooking, so I don’t think about it much
When I was stationed in Kaiserslautern, then-West Germany, there was a restaurant – der Tropfsteinhoelle (the Stalactite Cavern) – where a German woman, the server, and her Italian husband, the chef, served excellent saltimbocca, which was essentially what you make that way, only his was made with veal. It is really tasty! I considered trying what you did with the breasts, then backed out because I used the crockpot. Instead of topping it, the ham and cheese were put inside the pounded-out veal, as IF recall more than 50 years later. I could bee mistaken!

It was! He prepared it in olive oil, of course, and it arrived at the table tongue-scorching hot, with perfectly prepared pommes frites (French fries0. Every time I went there, I always had this same meal, it was that delicious!
I use my crockpot a lot on dialysis days since it prepares something to eat immediately after di get home and m too exhausted to make a hot meal otherwise.

That’s a fact! I have been having short conversations I had in German pop up lately, and those go back 50-53 years ago. I’m not sure what brought this little annoyance on, though it is amazing they stuck in my brain all this time!
It’s great that Andy is able to do the things he wants to do. Seems like you have cooking down to a science and work your way through having to purchase bigger quantities of chicken than you need for a meal. Leftovers can be reheated and sometimes taste better that way.
I tire of my own cooking after repeating the same food twice or three times. I have to make changes in the repeats so I’m eating something essentially different.
