This is a busy week. Ugh! I have something outside home to do every day till this coming Sunday. Today, it’s drive to Scottsbluff for a lung function test with Dr. Patel. my pulmonologist.

Of course, Thursday and Saturday are dialysis days, leaving Friday. Friday is the monthly Class of 1966 luncheon. I’m taking an apple pie that I’ll need to bake Thursday after dialysis or take a chance I’ll wake up early enough to bake and cool it early Friday morning. I think I better bake it after dialysis! Beef stew and chili are on the menu this time.

Here’s a quirky local (Nebraska?) culinary treat: chili and a cinnamon bun. The combination seems odd, yet it’s like waffles and fried chicken – try it, and it makes sense!

Good luck on the lung function test, Doug. The apple pie sounds good for the luncheon! I remember my mother making pies. Pumpkin was her favorite.
I used to make killer pecan pies and killer rhubarb pies. It’s turned out that I chose to skip the luncheon this time because I am suffering a big sleep deficit. Rest days between dialysis days have been rare lately and they are necessary!
Doug’s sleep is important, too!
