Not much going on here today. I should have gone for groceries but decided I didn’t feel like bringing more food in when I have frozen and canned things on hand that I haven’t used yet. There’s frozen meatloaf that would work in pasta, by itself, or in a sandwich. I know there are other things – frozen cooked chicken breasts – that add to the meal possibilities if I just defrost and repurpose them! 

I find making meals for one a bit tedious since I inevitably have too much for one meal, enough for two, but just too much for a third day in a row!

  1. The freezer is the bachelors friend. Your description reminds me of my days freezing portions, repurposing, and generally eating pretty well as a solo. Of course our feline friends like to check out whatever we have, too.

    • Yes, Andy must know everything I’m eating or drinking. I let him sniff things, knowing he might do something like sneeze on it or worse.

      The freezer chicken was a big success. I’m encouraged that I actually ate it all. In past, a three-pack of breasts might be 2/3rds scrapped out because the breasts were large enough I’d be eating on one for two days and not be in the mood to go for three days on Nr. 2, realizing it might be a week of chicken at the rate I was going.

  3. We eat a lot of leftovers here. I also make a large pot of stew, stick it in glass canning jars while still piping hot, and immediately refrigerate them.

    Andy is one sweet little kitty, Doug! 🙂

    • Most of my meals can be leftovers since it is impossible to make things like soup in small quantities. Well, maybe it can be done, but I haven’t done it!

      Yes, I am very happy I took Andy and his late brother home back in 2011! At the time, I worried it was too soon after the wonderful Louie the ginger cat’s death to bring two kittens into my home, but it worked out.

    • Thanks, T.W.! I used to make long ones to post on YouTube, then Microsoft “improve” things, dropped their video editing app that I was proficient using. These short 8 to 9 second ones are all that I can send to my laptop. Maybe I can send them directly to WP, like I do the photos and short videos. I’ll have to give that a try.

      Yes, the microwave is my best food prep tool, too! I do se the oven to bake brownies, bread, cookies, and biscuits, but it results in too much of each…which I eat all of anyway! Oink!

    • The wonderful, versatile egg! When I don’t feel up to dirtying a lot of things, I make a fried egg sandwich on toast. When I’m feeling mor ambitious, FI scramble eggs and make either scramble eggs or what I make and call an omelet, that is, something that looks more like failure but tastes good!

      I’m sorry you couldn’t view the short videos, Derrick. I had problems sending this post to Facebook. The preview photos showed, but only the audio copied over.

    • I’m always wary of doing these videos since some people can’t view them. I wasn’t in the mood to do my blog this time, so decided to go simply with just to fast-to-make videos. Not a good idea!
